
Tuna Stuffed Peppers
It’s a new year and I have been trying really hard to adopt a new habit of eating clean (or as clean as possible!). With a kitchen cupboard full of tuna cans, tuna has become my best friend when it comes to quick and easy healthy recipes. Tuna is a great source of Omega-3 fatty acids and lean protein. So today, I am excited to share a great recipe – tuna stuffed peppers – for lean but filling dinner I made the other day.
INGRIDIENTS
- 3 bell peppers, sliced in half and deseeded
- 2 cans of tuna (160gr per can)
- 1/2 can of red beans
- 2/3 can of sweet corn
- 100 gr feta or Greek style cheese
- 10 gr coriander
- Salt and black pepper for seasoning
- Olive oil
- Greek yoghurt for serving
METHOD
Preheat oven at 180°C. Next drain sweet corn and rinse red beans under cold water so they are no longer sticky. In a bowl mix beans, corn and drained tuna. Add finely chopped coriander, cheese, and salt and pepper. Mix everything well.
Fill pepper halves with stuffing. Season with a bit more ground black pepper. Drizzle with olive oil and place these tuna stuffed peppers in the oven.
Bake for 15-20 minutes until peppers get soft and stuffing get a lovely crust.
Serve these yummy tuna stuffed peppers while hot with a dollop of Greek yogurt. How easy was that? Happy healthy eating!
