Healthy and Easy Banana Oat Muffins

When I used to live in America, I got hooked on Martha Stewart’s easy and tasty recipes. So when the time came for me to explore the joys of the banana bread, it was Martha who helped me out! I absolutely love her banana bread recipe that I used for years and all of my friends and colleagues loved it too. However, recently on my latest quest for healthy cooking and eating, I decided to transform Martha’s recipe into a healthier version (to show the changes I made I am keeping original ingredients in parenthesis!) Also rather than making a bread loaf, I decided to make muffins which are a…

Eating Well: Raw Chocolate Brownies with Coconut Flakes

“OMG, I think I died and went to heaven!” was my initial reaction as I bit into the raw chocolate brownies I made today. You see, I LOVE chocolate…it’s my addiction and I am not ashamed to admit it! However, rather than stuffing myself with over-processed milk chocolate bars, I thought I would find a recipe for healthy and easy chocolate brownies that would satisfy my cravings.  Various food bloggers have come up with brilliant ideas of making raw brownies that require no baking, no flour and in some cases, no chocolate! So they are essentially vegan and gluten and refined sugar-free. I found this great recipe from a plant-based food blogger…

Weekend brunch is usually my time to indulge and I have to say I love occasional pancakes, crepes or Belgian waffles. I adapted it slightly and here is my final yummy result!  INGREDIENTS 1 1/2 cup of whole wheat flour (I didn’t have it when I decided to make waffles so I used…
