Eating Well: Weekend Brunch Frittata

I love Italian food and frittata is one of my favourite brunch dishes. It’s easy and very delicious, and can be healthy depending on the ingredients you use. I love adding greens, such as spinach, rocket or broccoli, mushrooms and other healthy veggies I may have around. 

INGREDIENTS 

  • 1 onion (peeled and diced)
  • 3-4 medium potatoes (peeled and diced)
  • some spinach or rocket chopped
  • 1 pack of mushrooms chopped
  • 4-5 eggs
  • some feta cheese
  • salt (seasoning to taste)
  • pepper (seasoning to taste)
  • Italian herbs mix for seasoning

 

METHOD

Preheat oven at 200 degrees Celsius. Fry onions with a dash of oil until golden
 Add potatoes and fry until golden and somewhat soft
Add diced mushrooms and fry for few minutes
Add spinach and fry for few minutes mixing all ingredients well
  In a separate bowl whisk eggs with a small dash of milk (optional; I use soy milk), salt, pepper and Italian herbs. Transfer fried vegetables into oven-proof dish, sprinkle with feta cheese and pour egg mixture over, and then place in the oven.
 
Bake frittata until nice golden crust and potatoes are completely cooked and soft.
