Easy Thai Prawn Laksa

Although I wouldn’t call myself an expert in Thai cuisine, I do love a hearty home-made Thai cooking. So today, I am sharing a super easy laksa recipe I created that involves only a few ingredients and takes very little time. Laksa is a traditional spicy curry soup that is cooked with chicken, fish or prawns and served with rice noodles. So whatever meat or fish you have at home, this recipe can easily be adapted.

INGREDIENTS

  • 1 medium onion
  • 180gr red Thai curry paste
  • 400gr coconut milk
  • 340-400gr prawns
  • 250gr pak choi
  • 200ml boiling hot water
  • 200gr rice noodles (for 2 people)
  • Fresh coriander to sprinkle

METHOD

First, to make laksa peel and chop onion and fry in a little bit of cooking oil. Once onion turns slightly gold, add chopped pak choi and fry until wilted.

Next, add prawns and cook for few minutes before adding coconut milk and red curry paste.

Add 200ml hot water and leave the laksa soup to cook for 10 minutes on medium heat.

easy-thai-prawn-laksa-recipeIn the meantime, boil more water and pour it in a pan with a lid. Place rice noodles, close the lid and soak according to instructions until they soften and are ready to be served.

To serve laksa, place a portion of noodles in a bowl and then pour sauce over until it turns into a noodles soup.
