Easy Thai Prawn Laksa
Although I wouldn’t call myself an expert in Thai cuisine, I do love a hearty home-made Thai cooking. So today, I am sharing a super easy laksa recipe I created that involves only a few ingredients and takes very little time. Laksa is a traditional spicy curry soup that is cooked with chicken, fish or prawns and served with rice noodles. So whatever meat or fish you have at home, this recipe can easily be adapted. INGREDIENTS 1 medium onion 180gr red Thai curry paste 400gr coconut milk 340-400gr prawns 250gr pak choi 200ml boiling hot water 200gr rice noodles (for 2 people) Fresh coriander to sprinkle METHOD First, to make laksa peel…

Turkey Mince Stuffed Peppers
Ever since I was a child, my Mum used to make stuffed bell peppers and they were always so tasty. As I grew up they became a favorite in my own family. I always cook my stuffed peppers in soupy sauce, instead of baking them in the oven as one would often find in recipes. They come out delicious and succulent, saturated by the tomato sauce and meat juices. Rather than using beef mince, this time I made them with turkey mince and they came out beautiful. So, today I am sharing one of my favorite recipes that is super easy and quick to make, yet filling and healthy. INGREDIENTS 6 bell peppers…

Blueberries and Ricotta Pancakes
Today I woke up and felt like having pancakes! Normally, on a weekend I would make banana pancakes or Belgian waffles, but I remembered having some ricotta cheese in my fridge and an easy recipe for ricotta pancakes I saved on Pinterest. It was a perfect excuse to try them out and oh, boy, I am glad I did. They came out so delicious and fluffy with mouthwatering blueberries bursting in the mouth that I had to share the recipe. INGREDIENTS 225 gr plain flour 185 gr ricotta cheese 2 eggs 1 tbsp caster sugar 1 tsp baking powder pinch of salt 375 ml buttermilk (you can also use kefir or…

Sweet Potatoe and Chocolate Brownies
If you are a chocolate addict like me, you will love this recipe of sweet potatoe and chocolate brownies I made yesterday! I first discovered this recipe thanks to Joe Wicks (aka the Body Coach); however, I slightly changed the recipe by adding walnuts and dropping orange zest that he recommends. These brownies, which are healthier than the traditional flour-based version, have simply gorgeous texture and taste. They are very easy and quick to make and can be consumed as a great post-workout snack or dinner time dessert. INGREDIENTS 500g sweet potatoes (2-3 depending on the size) 100g dark chocolate (or you can use 50/50 dark and milk chocolate) 30g oats 2-3 tbsp whey protein (optional) 1…

With a kitchen cupboard full of tuna cans, tuna has become my best friend when it comes to quick and easy healthy recipes. Tuna is a great source of Omega-3 fatty acids and lean protein. So today, I am excited to share a great recipe – tuna stuffed peppers – for lean but filling dinner I made the other day. Quick and Easy Red Lentil Soup
I am sucker for soups, especially around winter when it’s cold and dreary in London. One soup I recently discovered for myself is red lentil soup. Having ordered it several times from a nearby Turkish restaurant Hala, I decided to learn how to make one at home. And guess what, it’s so easy peasy that I had to share a recipe. You will thank me later! INGREDIENTS 1 1/3 cup red lentils 1 large onion, finely diced 1 large carrot, diced 2 teaspoons cumin 1 teaspoon smoked paprika 1 heaping tbsp tomato paste 5 cups (or 550 ml) boiling water 1 vegetable stock cube 1 tsp coconut or olive oil salt and…
