
Eating Well: Banana and Oats Pancakes
Pancakes, who doesn’t like some on a lazy Sunday? I do! But I don’t want to worry about counting my calories while I am enjoying my meal. This recipe allows me to do exactly that – with only 288 calories per 6 and no sugar or flour involved, this is a healthy breakfast alternative.
PANCAKES INGREDIENTS
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 medium banana, sliced
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 4 tablespoons almond or soy milk
METHOD
Preheat a skillet over medium heat and coat with cooking oil.
Add ingredients in a blender in the listed order and blend until smooth and frothy as shown here.
Using a ladle, drop batter onto skillet until desired size is reached. Cook until the pancakes start browning and bubbles start to form on the top of the pancake, then using a spatula, flip and cook on the other side.
Fresh pancakes can be served with fresh fruit or berry compote, honey, maple syrup, Greek yogurt and/or nuts and seeds (like pumpkin seeds). Yummy!
